Vegetarian Chili Recipes

Vegetarian Chili
1 white onion
1 red bell pepper
1 tablespoon minced garlic
1 tablespoon olive oil
1 can black beans
1 can kidney beans
1 can diced tomatoes
1 can tomato sauce
1 teaspoon ground cumin
2 teaspoons ancho chili powder
Cut the bell pepper in half and take out the seeds and membrane. Cut into small pieces. Dice the onion. Saute the onion, garlic and bell pepper in olive oil until tender. Add the ground cumin and ancho chili powder. Add the canned tomatoes and tomato sauce.
Drain and rinse the beans. Add them to the mixture and salt to taste. Simmer on low heat for half an hour. Excellent served with cornbread. Serves 4-6 people.
