Vegan Dessert Recipes

Choosing to follow a vegan diet does not mean desserts have to be completely restricted. In fact, besides the vast array of vegetarian cookbooks on bookshelves, most dessert recipes can be adapted to meet the needs of a vegetarian-based diet. The desserts offered below will give you a taste of the many vegan dessert recipes available. Creating some of your own vegan dessert recipes can be rewarding as well.
The Recipes
Lemon Tofu Cheesecake
Ingredients
Crust:
2 c. graham crackers crumbs (about 12 crackers)
3 tbs. soy margarine, melted
1/4 c. granulated sweetener
Filling:
2-½ c. firm silken tofu
6 tbs. fresh lemon juice
1/4 c. agave nectar
2 tsp. lemon zest
1 tsp. vanilla
Directions
Preheat oven to 350 degrees.
For crust, blend together the graham crackers, margarine, and granulated sweetener in blender or food processor. Pat into 9" spring form pan coated with cooking spray.
For filling, blend the tofu, honey, lemon juice, lemon zest, and vanilla in blender or food processor. Pour into the crust and bake 45-60 minutes or until small cracks start to form around the edges. Let cool and serve topped with fresh fruit and nondairy whipped topping.

Creamy Chocolate Marble Pie
Ingredients
16 oz. firm silken tofu
2/3 c. sugar
¼ c. canola or safflower oil
2 tsp. vanilla
3 tbs. cocoa powder
1 8” baked graham cracker crust
Note: You can use the crust from Lemon Tofu Cheesecake recipe above, pressing into 8” pie plate coated with cooking spray instead of spring form pan. Bake for 10 minutes or until golden and set.
Directions
Using a food processor or blender, blend together the tofu, sugar, oil, vanilla, and salt until smooth. Reserve 1 cup of filling and pour remaining filling into piecrust. Add cocoa powder to the reserved filling and blend thoroughly. Drop cocoa filling by tablespoonfuls onto pie. Draw a knife through chocolate to make swirls. Chill until firm, at least 4 hours.
