Community Member Experience With The South Beach Diet

I've been on SB for a couple of months now. I actually do a lot of stir fry type stuff with a bit of olive oil and a bit of soy sauce and lowfat chicken broth.

I find I rarely use the SB recipes form the book and instead rely on the list of foods to create my own recipes.

Lately I've enjoyed...beef shish kabobs, ground turkey oriental lettuce wraps, plenty of veggies all kinds of ways, lean pork, fish, chicken and beef.

For breakfast I prep an egg casserole, with egg beaters and/or eggs, tons of spinach, sometimes broccoli (I like the broccoli "cole slaw" prepped in the bags for this or frozen broc already cut up), peppers, zucchini, and I make a big dish of it then cut it into squares. Two squares = 1.5 eggs (or beaters). I then freeze it and heat up the squares each day. Easy :)

I'm feeding it to my family too though they often have rice or a baked potato along with whatever I'm having which is mainly lean meat, fish and veggies.
