Hello. As you all know, it’s tough sticking to a gluten free diet, especially in the beginning. Luckily, there are lots and lots of gluten free cookbooks available out there. What are your favorites? For bread and baking, I love anything by the late, great Bette Hagman. I also love Carol Fenster’s “Gluten-Free Quick and Easy” and “1000 Gluten-Free Recipes.” |

“The View’s” Elisabeth Hasselbeck follows a strict Gluten-free diet and she is constantly reviewing Gluten-free cookbooks on the show. I remember seeing a few links on ABC’s website. That might be a good source for additional recipes. Here’s a recipe I have for Gluten-free Peanut Butter Balls (handy around the holidays): PEANUT BUTTER BALLS Ingredients: 2 cups peanut butter 1 lb. powdered sugar 1 cup butter, softened 6 blocks of your favorite chocolate Directions: In a bowl, combine peanut butter, powdered sugar and butter. Beat until well blended and smooth. Roll mixture into 1-inch balls. Place on wax paper lined baking sheet. Chill in refrigerator for about an hour. Melt chocolate in microwave. Stir until smooth. Dip balls in chocolate, until well coated. Set on a waxed paper-lined baking sheet and let stand until hardened. |

Has anyone tried the recipes from the “You Are What You Eat” dietitian (her name is escaping me right now?). I’m especially interested in getting my hands on her pizza recipe. She made a pizza crust with sweet potatoes, topped with sauce and veggies that looked yummy and was gluten free but I can’t find the recipe. |

My wife and I have recently published a gluten-free cookbook entitled “Gluten-Free with Love” that encapsulates what we have discovered over many years and we want to share this vital information to those who are also suffering from the same problems without having to spend the same amount of time we did to discover the alternatives.
